This is the Conch Salad stand out in front of Yaddie's Restaurant. Not sure if I'm spelling her name right :-).

On the left is the conch, still in its shell. They break a hole in the shell and pry the conch out. What you're left with is shown on the right. This gets chopped up along with lemons, limes, onions, and some other stuff to make Conch Salad!
